The delicious Olives trencades are broken olives, smashed with a hammer until they break open so that the olives absorb the piquant brew.
They are made from common varieties from the Tramuntana Mountains and traditionally taste a bit more bitter than the normally known olive varieties.
Pickled in brine with spices (bay leaf, sea fennel, Mallorcan pebre chilli).

You can determine the degree of bitterness of your olives yourself: replace the brine with clear water and change daily.
